What’s in it: -1 each, diced: red pepper, yellow pepper, onion (0 points) -1LB boneless skinless chicken breast, cut into small pieces (0 points) -1 package of skinless turkey kielbasa (I used Aldi's fit & Active brand) cut into medallions (2 points for 2oz)
-1LB shrimp (0 points) - 2Tbs flour (I used gluten free) (2 points) - 2 cups of FF chicken broth (0 points -1 large can of crushed tomatoes (0 points)
-seasonings: gumbo file, creole and/or blackened seasoning, garlic powder, salt, pepper, thyme, 2 bay leaves (0 points)
How to make it happen: - Add diced onion and peppers to large pot with cooking spray - season with salt, pepper and garlic powder and cook until veggies are soft (about 10 min) - Add chicken and turkey kielbasa to the veggies, add more seasoning and creole spices, cook on medium until chicken is cooked through (about 10 min) - Sprinkle in 2TBS of flour and mix well, this will give it that thickness - add chicken broth and crushed tomatoes, bay leaves, thyme, gumbo file, and more creole seasoning - pop the lid on and simmer for 10 min - Toss in the shrimp and cook for another 5 min and BAM you have super yummy Gumbo for 2 points per cup

Side Note: It’s critical to season generously after each step to really develop that creole flavor! I served mine with a cup of brown rice for 3SPs and topped with fresh chives. Leave out the sausage and rice and you’ve got yourself a ZERO POINT meal! Feel free to add celery with the peppers and onions, personally don't love it but it'll pair well if you're a celery fan.
