Salad with Homemade Caesar Dressing for 1 point

What's in it:

- 1C of fat free greek yogurt (0 points)

- 1 tbs of each: Lemon juice (0 points), Worcestershire sauce (1 point), Dijon mustard (0 points),Anchovy Paste (1 point)

- 2 tbs of parmesan cheese (2 points)

- Romaine lettuce, chopped (0 points)

- cherry tomatoes, sliced in 1/2 (0 points)

- Garlic salt, cracked black pepper (0 points)


How to make it happen:

- add greek yogurt, lemon juice, Worcestershire, dijon, anchovy paste, parmesan, garlic salt and pepper to a bowl and mix well

- Add chopped romaine and tomatoes to a large salad bowl, add dressing and mix well - top with cracked black pepper

* 4 total servings @ 1 point per serving


Side Note: serve this as a side for any Italian meal, including this 5 point Eggplant Lasagna

You can also make this a standalone meal or quick low point lunch by adding grill chicken or shrimp!
