Air Fryer Filet Mignon, Crispy Fingerling Potatoes, and Brussels Sprouts for 8 Points

* Prep Time: 10 min*

* Air Fryer Temp: 400 for potatoes/390 for steak*

* Air Fryer Cook Time for Potatoes: 12 min*

* Air Fryer Cook Time for Filet: 4-6 min* What’s in it: -4 ounce filet mignon (4 points) -1 cup fingerling potatoes, cut in fourths (4 points) -sliced mushrooms (0 points) -1 large sliced onion, divided in 2 portions (0 points) -Brussel sprouts, stems removed and cut in half (0 points) -your favorite steak seasoning, salt, pepper, garlic powder (0 points) -cooking spray (0 points) How to make it happen: -pre-heat air fryer to 400 -while heating, generously season both sides of steak with salt, pepper and steak seasoning and set aside - add sliced potatoes to pre-heated air fryer along with 1/2 the sliced onion, cooking spray, salt, garlic powder, and steak seasoning cooking for 12 min (or until potatoes are soft shaking basket 1/2 way thru) -while potatoes are frying, add cooking spray to a pan and add brussels sprouts, garlic powder, salt and pepper - cooking until tender -remove brussels and using the same pan, add sliced mushrooms and other 1/2 of onion and season with steak seasoning -remove potatoes from air fryer and set aside, re-spray the basket and add filet mignon -turn temp down to 390 and cook for 3 min, flip, and cook for an additional 3 min - remove and let rest for 4-5 min -temp was medium (just the way I like it 😉) ***yields 4 oz of steak and 1 cup potatoes for 8 points***

Side Note: add a little spritz of spray butter to the top of the steaks while they’re resting and don’t forget to really season your steak. If you think it’s too much, put a little more on and let the steak get to room temp before cooking 😋
