Cowboy Caviar: 1 Cup for 0 Points

What's in it:

- Diced: 1/2 red onion, 1/2 yellow pepper, 1/2 red pepper, 1/2 orange pepper, 2 jalapeños, 2 cups (cut in 1/2) cherry tomatoes (0 points)

- 1 can each, drained: sweet corn, black-eyed peas, black beans (0 points)

- 1 bunch of roughly chopped cilantro (0 points)

- Two limes, juiced (0 points)

- 1/4 cup red wine vinegar (0 points)

- Spray olive oil (0 points)

- Salt, pepper, chili powder, garlic powder (0 points)


How to make it happen:

- Dice all veggies and peppers and add to large mixing bowl

- Drain beans, corn, and black-eyed peas and add to the veggies; mix well

- Roughly chop cilantro and add to caviar

- Lightly spray mixture with olive oil and season well with salt, pepper, chili powder and garlic powder - just taste along the way adding more seasoning as needed

- In a separate bowl whisk together the juice of two limes, 1/4 cup of red wine vinegar, and 5 calorie agave nectar and pour over the top of the cowboy caviar, mixing well

- Pop a lid on the cowboy caviar and store in the fridge for about an hour to allow the flavors to marry and serve



Side Note:

Feel free to add some avocado but don't forget to add the points. Also if you don't like Cilantro you can replace it with chopped green onions or omit it altogether. You can serve this as a side to your turkey burgers, put it on top of your grilled chicken, or bring it to your friends BBQ with a side of baked tortilla chips!
