What’s in it: - 1lb boneless skinless chicken, cut into small pieces (0 points) - 1/4C gluten free flour (3 points) - 1 crown fresh broccoli (0 points) - 1 bunch broccoli rabe (0 points) - 1C fat free chicken broth (0 points) - 1 can white or cannellini beans(0 points) - Cooking spray (0 points) - Salt, pepper, red pepper flakes, garlic powder (0 points) - 2 lemons: Juice of one fresh lemon + zest of another (0 points)
How to make it happen: - Add gluten free flour, salt, pepper, garlic powder to a larger ziplock bag, add chicken pieces and shake well coating all the chicken - Spray pan with oil and add coated chicken, cooking until brown (about 10 min) - Remove chicken and set aside to cook - Using the same pan, add chicken broth, salt, pepper, red pepper flakes and scrap the pan getting all the little crispy bits incorporated - Add broccoli and broccoli rabe, cover and simmer for 5 min (until broccoli is tender) - Add white beans and simmer for another 3 min, smashing about 1/2 of the beans to thicken the mixture - Return chicken back to the pan and squeeze the juice of one lemon into the pan - Zest another lemon on top for garnish
Side Note: I added 1/2 cup of brown rice to the meal for 4SP, however, it was super filling without and all for ONE point 😋 yields about 3-4 servings
