What's in it:
- 4 boneless skinless chicken breasts, sliced (0 points)
- 1 onion, sliced (0 points)
- 1 package of mushrooms, sliced (0 points)
- 1 cup brown rice (17 points)
- 2.5 cups fat free chicken broth (0 points)
- 1/2 cup fat free half & half (3 points)
- 1/2 cup fat free greek yogurt (0 points)
- 1/4 parmesan cheese (4 points)
- 2 tbs Worcestershire sauce (0 points)
- 2 tbs dry cooking wine (1 point)
- seasoning: Salt, pepper, garlic powder, Italian seasoning, and rosemary, spray oil (0 points)
How to make it happen:
- Heat large dutch oven or sauce pan with tight fighting lid with a few sprays of oil and add sliced onion, sliced chicken, and all seasonings cooking until onions are translucent and chicken is cooked through (about 10 min)
- add dry brown rice, mushrooms, and chicken broth and bring to a boil, reduce heat and pop the lid on cooking on low for 25 min (until rice is tender)
- once rice is cooked add half & half, greek yogurt, Worcestershire, cooking wine and parmesan mix well and cook uncovered for 5 min (feel free to add more seasonings if you'd like)
- Makes 6 cups at 4 points per cup
Side Note: I added peas and some fresh basil to mine as I really needed something green but this would also go great with a side of broccoli. You can leave out the parmesan to save on points but totally worth the points if you have room for them. I also seasoned a few additional times throughout the cooking process, taste along the way and adjust as you feel you need it...oh and it isn't pretty but dang it was tasty!!!
