What's in it:
- 1 LB 96% fat-free ground beef (10 points)
- 1 Vidalia onion, 1 green pepper: chopped (0 points)
- 1 package of sliced, fresh mushrooms (0 points)
- 1 15oz can fire-roasted tomatoes (0 points)
- 1 28oz can of crushed tomatoes (0 points)
- 1/4 cup of fat-free chicken stock (0 points)
- 6 oz dry elbow noodles (17 points)
- 1/2C of 2% shredded cheddar cheese (5 points)
- 2Tbs parmesan cheese (from a shaker) (1 point)
- seasoning: garlic salt, pepper, Italian seasoning, red pepper flakes, cinnamon, spray oil (0 points)
How to make it happen:
- Heat deep saucepan on medium with spray oil, add onion green pepper, and mushrooms - season generously with all seasonings (except cinnamon) and cook until soft
- Add ground beef and cook until meat is browned (season with the above seasoning again)
- Pour in crushed tomatoes, fire-roasted tomatoes, 1TSP of cinnamon and chicken stock and bring to a light boil - Stir in elbow noodles, reduce heat to low, cover and simmer for 20 min (until pasta is cooked to your liking)
- Remove from heat and stir in 1/2 cup of cheddar and 2tbs of parm
- Yields 7 cups at 5 points per cup
Side Note: Swap out the ground beef for 99% fat-free ground turkey and this recipe becomes about 3 points per cup! I know the cinnamon sounds strange but it gave it the sweetness I was looking for - so give it a shot.
