Salsa Verde Turkey Burgers with Sweet Corn Elote for 0 Points

What's in it:

- 1 LB 99% fat free ground turkey (0 points)

- 1/2 red onion, 1/2 red pepper, 1/2 yellow pepper: minced (0 points)

- 1/2 Jalapeño (optional): seeds removed and minced (0 points)

- 1 egg (0 points)

- 1/4 cup of green salsa verde (0 points)

- 1/4 cup of Panko or breadcrumbs (3 points)

- 2 ears of fresh sweet corn, husks on (0 points)

- 1/2 C fat free greek yogurt (0 points)

- seasoning: (tsb or more of each) Garlic salt, Tajin chili lime seasoning, chili powder, adobo powder (0 points)

How to make it happen:

- Preheat grill to 350 and toss the corn (in the husk) on the top rack

- In a large glass bowl add ground turkey, peppers, onion, jalapeño, egg, Panko, salsa verde and a tbs (or more) of all seasonings - mix well.

- Form into burger shape - the mixture will seem a little wet but it makes for a super juicy turkey burger

- Grill for 5-7 min on each side - until turkey is fully cooked and the center are white

- Remove corn from the husks and cut off the cob - place in a large bowl and mix with fat free greek yogurt, garlic salt, chili powder, and Tajin (add more seasoning to your liking)

- Serve on a bed of lettuce and top with additional salsa

- Makes 6 turkey burgers and a cup of elote


Side Note: I added some Bolthouse Farms greek yogurt avocado ranch dressing to the top of my burger for 2 points. If you can't find fresh sweet corn you can always use canned, however, I'd recommend fresh while its in season!
