Crispy Pork Piccata with Air Fried Potatoes : 7 points

* PrepTime: 30 min

* Air Fryer Temp: 400

* Pork cook time: 7-10 min

* Potato cook time: 10-12 min


What's in it:

- 4 boneless skinless pork chops, 4 oz each (4 points per chop)

- 1 egg, beaten (0 points)

- 1/3 C Panko (4 points) - season with lemon pepper & garlic salt

- 1 Shallot, chopped & 1C sliced mushrooms or more (0 points)

- 1Tbs "I can't believe it's not butter, Lite" (1 points)

- 1 Tbs Capers, drained (0 points)

- 1C fat free chicken broth (0 points)

- 1C Creamer (or baby) potatoes, cut in 1/2 (4 points)

- The juice of 1 lemon (0 points)

- Garlic Salt, Lemon Pepper Seasoning, Spray oil/PAM (0 points)


How to make it happen:

- Pre-heat Air Fryer to 400 degrees

- Once pre-heated, add halved potatoes generously coated in spray oil and garlic salt cooking for 10-12 min

- While potatoes are cooking, lay pork out on parchment paper and pound with meat tenderizing mallet (try not to tear the meat but you can really get some aggression out!)

- Dredge each chop in egg wash then to a separate plate with seasoned Panko crumbs - coating all sides of the pork

- remove potatoes from air fryer and set aside. Respray basket adding pork and cooking for 7-10 min flipping 1/2 way through

- In a pan add shallots, mushrooms and garlic salt, cooking until translucent

- Add chicken broth, "butter", and the juice of 1 lemon cooking on high until liquid reduces down to about half then toss in your capers and remove from heat

- Remove pork from air fryer and let rest for 3-4 min and make sure internal temp is at least 145 degrees

- Top your pork with that delicious Piccata sauce and serve along side with some asparagus and sautéed arugula!

***Serving for 7 points: 1 chop, 1/2 cup of potatoes, and 1/4 of the lemon piccata sauce***


Side Note:

If you're not a pork fan, feel free to substitute chicken and you can also save a few points this way too! You can even add a little white cooking wine to the piccata sauce to pump up the flavor.
