What's in it:
- 4 fresh salmon fillets, skin on (0 points)
- 1 Vidalia onion, sliced thin (0 points)
- 1/2 cup sliced mushrooms (optional) (0 points)
- 10 cherry tomatoes, cut in half (0 points)
- 8 Kalamata olives, cut in half (3 points)
- 2 tbs capers (0 points)
- 1 tbs anchovy paste (1 points)
- fresh basil, julienned (0 points)
- 1/4 cup fat free chicken broth
- fresh asparagus, ends trimmed
- cooking spray, fresh garlic (or garlic powder), red pepper flakes, salt, pepper
How to make it happen:
- pre-heat air fryer to 390
- spray sauté pan with cooking spray and add onions and mushrooms, cooking on medium until caramelized then add broth and reduce down
- while onions are cooking, spray pre-heated air fryer basket with cooking spray and add salmon (skin down) season with garlic powder, salt & pepper and cook for 8 min
- add cherry tomatoes, kalamata olives, capers, fresh garlic, red pepper flakes, pepper and anchovy paste to your onion mixture, cooking for one minute. Remove from heat and add in julienned basil then set aside
- using the same pan, add asparagus and season with salt, pepper and garlic, cooking for 3 min
- remove salmon from the air fryer and top with the puttanesca sauce and serve with a side of asparagus. 1 point per servings, makes 4 servings total
Side Note: I used some lemon pepper seasoning on my salmon as well and felt it gave it some needed acidity. Go easy on the salt as most of the ingredients in the sauce are already heavily salty on their own. Oh, and don't skip the anchovy paste, it's critical to the flavor profile!
