What’s in it: - half LB 95/5 ground beef (6 points) - 1 small chopped red onion (0 points) - 1/2C potato, skinned and diced (2 points) - 1/2C frozen peas (0 points) - 1 1/2 fat free Greek yogurt(1/2C reserved for dipping sauce(0 points) - 1 C Self rising flour (12 points) - Your choice of hot sauce/salsa (0 points) - Cooking spray (0 points) - Salt, pepper, old El Paso taco mix packet (0 points) How to make it happen: - Dice potato and onion, add to a sauté pan with cooking spray, salt and pepper and cook until soft - Add ground beef and cook through - Add taco seasoning, a dash of hot sauce and frozen peas, cooking for an additional 5 min, then remove from heat and set aside to cool - While meat mixture is cooling, mix 1C self rising flour with 1C fat free Greek yogurt to make dough - Sprinkle hands and counter with flour and pinch off enough dough to fit in the palm of your hand - Flatten into about 2-3 inch diameter circles - Spoon in mixture into the center of the dough (a little goes a long way) and fold into a half moon shape pinching the edges together with a fork - Spray your basket and the tops of the empanadas and pop 3 at a time I’m your air fryer at 400 degrees for 7 min - Mix together 1/2C FF Greek yogurt with your favorite salsa or hot sauce for dipping - made 7 empanadas, 3 points each Side Note: switch the ground beef for 99% Fat Free ground turkey to save on points 😋 also, don’t over fill them, if you cook a full pound of meat, there should be plenty leftover for taco salad the next day!
