Coconut Shrimp and Caribbean Jerk Mahi-Mahi with Mango Dipping Sauce for 5 Points

What’s in it:

-2 pieces thawed mahi mahi(0 points)

-bag frozen shrimp, thawed (0 points) -riced cauliflower (frozen or fresh) (0 points) -1 carrot, 1/2 red onion, 1 yellow pepper (0 points)

-1 mango, 2 limes, 1 green onion, 1 fresh jalapeño (0 points) -1 can chickpeas (0 points) -1 egg (0 points) -5 TBSP shredded coconut (9 points) -1/2C whole wheat panko (3 points) -2TBSP coconut flour (3 points) -1TBSP apricot preserves (2 points) -1TSP rice wine vinegar (0 points)

-coconut oil spray (0 points)

-Seasonings: Salt, garlic powder, jerk seasoning, red pepper flakes, pepper

How to make it happen: - Set air fryer to 370, add drained chickpea tossed with jerk seasoning and cooking spray, cook for 20 min shaking the basket every 5 min

- To make the Island “rice” dice carrot, 1/2 onion, bell pepper, and 1/2 jalapeño, mango. Spray pan with coconut oil and cooking until soft - Add riced cauliflower and season with salt, pepper, garlic, and jerk seasoning, cook through then add 2/3 chopped mango and set aside

- Remove fried chickpeas from the basket (they should be nice and crunchy like peanuts) add mahi-mahi seasoned with salt, pepper, and jerk cooking for 12-13 min, remove and keep warm. Feel free to spray the basket with a little more cooking spray if needed

- While mahi is frying, pop shrimp into large baggie with coconut flour and shake then dip into egg mixture - add shrimp to another baggie with coconut flakes and panko - Shake and bake in the air fryer (re-coat with a spritz of coconut oil) for 6-7 min, tossing half way thru

-combine leftover chopped red onion, jalapeño, mango, and fresh squeezed lime to make mango salsa

-mix apricot preserve, red pepper flakes, and rice wine vinegar for your coconut shrimp dipping sauce and garnish with salsa, fresh squeezed lime, and air fried chickpeas!


Side note: There are a lot of components here so feel free to use try just the mahi or shrimp by themselves if you aren't feeling as adventurous. Oh and the chickpeas were a delightful surprise, I’ll be making these as a snack in the future for zero points WOOT!
