What’s in it: -4 Fresh salmon filets (0 points) -2 cups fresh brussels sprouts, ends cut off (0 points) - 1 packet Quaker instant grits (3 points) - 1/2 c FF chicken broth (0 points) -1/4 cup low fat shredded cheddar (2 points) -3tbs FF Greek yogurt (0 points) - spices: lemon pepper, garlic powder, salt, pepper (0 points) - Garnish: fresh lemon & scallion (0 points) . How to make it happen: - Preheat air fryer to 390
- Generously season fresh salmon with lemon pepper, salt, pepper, and garlic powder - spray basket with oil add the salmon cooking for 7-10min (depends on how you like your salmon) - While salmon is "frying" season brussels sprouts with the same seasonings as the salmon - Remove salmon from air fryer basket, replace with brussels and cook at 390 for 15 min, tossing every 5 min - Microwave grits as directed (yes I am a lazy grits person) and substitute water for 1/2 cup chicken broth then mix in 1/4 cup low fat cheddar - Aioli: mix 1/2 fresh squeezed lemon, Greek yogurt, and lemon pepper seasoning - garnish salmon with fresh scallion & fresh lemon and serve with crispy brussels and cheesy grits
Side Note: Keep the skin on the salmon and put it in the air fryer skin down. The salmon will slide right off the skin when it’s cooked and locks in all of that rich flavor (seriously, it tastes like butter!) I make salmon in the air fryer at least once a week and just switch up the sides
